Ingredients
- 1 jar (24 oz.) DEL MONTE® Orchard Select® Sliced Pears
- 1/3 cup olive oil
- 2 Tbsp. white wine vinegar
- 2 tsp. Dijon mustard
- 2 tsp. honey
- 1/2 cup fresh cranberries, coarsely chopped
- 1 Tbsp. sugar
- 1/4 cup thinly sliced red onion
- 8 cups loosely packed fresh arugula, spinach or lettuce
- 1/3 cup sliced almonds, toasted
Preperation
- Drain pears reserving 2 tablespoons syrup. Combine reserved syrup, oil, vinegar, mustard and honey; mix well.
- Toss cranberries with sugar in salad bowl; add onion, arugula, and pears to salad bowl. Just before serving, gently toss with dressing. Garnish with almonds.
