Ingredients
- 3 cups diced grilled chicken
- 1 cup diced celery
- 1 cup sliced red pepper
- 1 cup sliced green pepper
- 1/4 cup chopped green onions
- 1/2 cup light mayonnaise
- 1/2 cup low-fat plain yogurt
- 1 Tbsp. honey
- 1 tsp. grated lime peel
- 2 Tbsp. fresh lime juice
- 1/4 to 1/2 tsp. cayenne (to taste)
- Baby spinach
- 1/2 cup cashews
- 1 jar (24 oz.) DEL MONTE® SunFresh® Sliced Mangos, drained
Preperation
- Combine chicken, celery, peppers and onions in bowl.
- Blend together mayonnaise, yogurt, honey, lime peel, lime juice and cayenne in small bowl.
- Toss dressing with chicken mixture; chill.
- Arrange chicken salad over a bed of baby spinach. Arrange fruit around chicken mixture. Sprinkle with cashews. Garnish with additional green onions and lime wedges, if desired
