Mango Grilled Chicken Salad

Ingredients

  • 3 cups diced grilled chicken
  • 1 cup diced celery
  • 1 cup sliced red pepper
  • 1 cup sliced green pepper
  • 1/4 cup chopped green onions
  • 1/2 cup light mayonnaise
  • 1/2 cup low-fat plain yogurt
  • 1 Tbsp. honey
  • 1 tsp. grated lime peel
  • 2 Tbsp. fresh lime juice
  • 1/4 to 1/2 tsp. cayenne (to taste)
  • Baby spinach
  • 1/2 cup cashews
  • 1 jar (24 oz.) DEL MONTE® SunFresh® Sliced Mangos, drained

Preperation

  1. Combine chicken, celery, peppers and onions in bowl.
  2. Blend together mayonnaise, yogurt, honey, lime peel, lime juice and cayenne in small bowl.
  3. Toss dressing with chicken mixture; chill.
  4. Arrange chicken salad over a bed of baby spinach. Arrange fruit around chicken mixture.   Sprinkle with cashews.  Garnish with additional green onions and lime wedges, if desired
