Ingredients
- 8 Tbsp. (1 stick) unsalted butter
- 6 Tbsp. margarine
- 3/4 cup sugar
- 7 oz. (1 tube) almond paste, coarsely chopped
- 2 tsp. vanilla extract
- 1 tsp. almond extract
- 3 eggs
- 1-1/2 cups all-purpose flour
- 1-1/2 tsp. baking powder
- 1 jar (24 oz.) DEL MONTE® Orchard Select® Sliced Cling Peaches, drained
- Brown sugar
- Cinnamon
Preperation
- Preheat oven to 350°F. Generously grease an 8x8-inch glass baking dish.
- Beat together butter, margarine and sugar until light and fluffy in a large bowl using an electric mixer.
- Add almond paste, vanilla extract and almond extract; beat until smooth. Add eggs, one at a time, beating well after each addition.
- Add flour and baking powder; mix until smooth. Pour into prepared baking dish.
- Arrange peach slices attractively on top, pressing about 1/4-inch into batter. Sprinkle lightly with brown sugar and cinnamon.
- Bake about 55 to 60 minutes or until top is golden brown and toothpick in the center comes out clean. Cool on baking rack.
Tip: Will keep at cool room temperature covered with plastic wrap for about 3 days.
