Ingredients

  • 8 Tbsp. (1 stick) unsalted butter
  • 6 Tbsp. margarine
  • 3/4 cup sugar
  • 7 oz. (1 tube) almond paste, coarsely chopped
  • 2 tsp. vanilla extract
  • 1 tsp. almond extract
  • 3 eggs
  • 1-1/2 cups all-purpose flour
  • 1-1/2 tsp. baking powder
  • 1 jar (24 oz.) DEL MONTE® Orchard Select® Sliced Cling Peaches, drained
  • Brown sugar
  • Cinnamon

Preperation

  1. Preheat oven to 350°F. Generously grease an 8x8-inch glass baking dish.
  2. Beat together butter, margarine and sugar until light and fluffy in a large bowl using an electric mixer.
  3. Add almond paste, vanilla extract and almond extract; beat until smooth. Add eggs, one at a time, beating well after each addition.
  4. Add flour and baking powder; mix until smooth. Pour into prepared baking dish.
  5. Arrange peach slices attractively on top, pressing about 1/4-inch into batter. Sprinkle lightly with brown sugar and cinnamon.
  6. Bake about 55 to 60 minutes or until top is golden brown and toothpick in the center comes out clean. Cool on baking rack.

Tip: Will keep at cool room temperature covered with plastic wrap for about 3 days.
